Many years ago we lived and owned a restaurant in the beautiful Hunter Valley of NSW, Australia. I dear friend I made had and still has the trendy and ever popular Perenti Cafe. For Christmas one year we were given her homemade shortbread in a vintage tin that I still fondly own. She shared this recipe with me and I "gift" shortbread to friends and family constantly! I often can be caught making double batches in the middle of the night prior to picking up eldest daughter from the airport as they are her all time favourite.
